  1. Preheat barbecue or grill to 600F-700F.
  2. Make seasoning rub. Add ingredients in a bowl and mix until combined. Spread evenly over steak and let sit for at least 30 minutes and steak has come to room temperature.
  3. After the steak has come to room temperature, place steak on grill to sear. After 2.5 minutes, turn the steak 90 degrees making a crisscross pattern on the steak. Leave for 2.5 minutes. Flip steak and sear for 2.5 minutes. Turn steak 90 degrees and sear for the last 2.5 minutes.
  4. Turn off the heat to side of the grill. If the barbecue has one, set the steak on the barbecue’s upper rack; otherwise, place the steak on the side of the grill without heat. Grill the steak in indirect heat until a meat thermometer reaches an internal temperature of 125F or until desired doneness is reached. Remove from heat.
  5. Let the steak rest under foil for 10 minutes. Once rested, slice steak against the bone to remove. Slice meaty part into pieces of desired thickness. Serve.
